  • 400 grams gluten-free noodles
  • 500 grams beef chuck
  • 2 medium carrots
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large onion
  • 3 garlic cloves
  • 2 tablespoons tomato paste
  • 400 grams canned tomatoes
  • 1 liter beef broth
  • 3 tablespoons soy sauce (gluten-free)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons vegetable oil
  • 0.5 bunch fresh cilantro

Directions

Step 1

Begin by preparing the beef. Cut the beef chuck into small, bite-sized cubes. Season with salt and black pepper.

Step 2

In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and brown them on all sides. This should take about 5-7 minutes.

Step 3

While the beef is browning, peel and thinly slice the onions, carrots, and garlic cloves. Core and julienne the red and green bell peppers.

Step 4

Once the beef is browned, remove it from the pot and set aside. In the same pot, reduce the heat to medium and add the onions and garlic. Sauté until the onions are translucent, about 3 minutes.

Add the carrots and both bell peppers to the pot. Stir well and cook for another 5 minutes until they begin to soften.
