Ingredients

  • 500 grams Ground beef
  • 500 grams Ground lamb
  • 1 large Onion
  • 3 whole Garlic cloves
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Sumac powder
  • 1 large Lemon
  • 4 tablespoons Gluten-free bread crumbs
  • 2 tablespoons Chopped parsley

Directions

Step 1

Grate the large onion and squeeze out the excess juice. Place the grated onion in a large mixing bowl.

Step 2

Crush the garlic cloves and add them to the mixing bowl.

Step 3

Add the ground beef and ground lamb to the bowl with the onion and garlic.

Step 4

Sprinkle in the salt, black pepper, turmeric powder, cumin powder, and sumac powder. Mix the ingredients thoroughly using your hands until well combined.

Step 5

Add the gluten-free bread crumbs and chopped parsley to the meat mixture and continue mixing until everything is evenly incorporated.

Step 6

Take a lemon, cut it in half, and squeeze the juice into the meat mixture, ensuring to remove any seeds.

Step 7

Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes to allow the flavors to meld.

Step 8

Preheat your grill or indoor grill pan to medium-high heat.

Step 9

Divide the meat mixture into 12 equal parts. Shape each portion into an oval or sausage shape and flatten slightly. Thread each kebab onto a metal skewer, pressing to secure the meat onto the skewer.

Step 10

Place the skewers on the hot grill and cook for about 7-8 minutes on each side, or until the kebabs are sizzling and cooked through. They should be nicely browned on the outside.

Step 11

Serve immediately, garnished with additional sumac and fresh herbs, accompanied by rice or saffron rice, grilled tomato, and flatbread.
