  • 400 grams aged kimchi
  • 300 grams tofu
  • 200 grams pork belly or beef
  • 1 medium onion
  • 2 stalks green onions
  • 3 cloves garlic cloves
  • 2 tablespoons gluten-free soy sauce
  • 1.5 tablespoons gochugaru (Korean red pepper flakes)
  • 4 cups gluten-free chicken or vegetable stock
  • 1 tablespoon sesame oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 100 grams enoki mushrooms (optional)

Directions

Step 1

Begin by preparing the ingredients. Cut the tofu into bite-sized cubes. Slice the onion into thin strips and chop the green onions, separating the white parts from the green. Mince the garlic cloves.

Step 2

In a medium pot, heat the sesame oil over medium heat. Add the pork belly or beef and stir-fry until it's slightly browned, about 3-4 minutes.

Add the sliced onions and minced garlic to the pot, cooking for another 2 minutes until the onions are translucent.

Stir in the kimchi and gochugaru, and cook for 5 minutes until the kimchi is softened and aromatic.
