Begin by preparing the ingredients. Cut the tofu into bite-sized cubes. Slice the onion into thin strips and chop the green onions, separating the white parts from the green. Mince the garlic cloves.
In a medium pot, heat the sesame oil over medium heat. Add the pork belly or beef and stir-fry until it's slightly browned, about 3-4 minutes.
Add the sliced onions and minced garlic to the pot, cooking for another 2 minutes until the onions are translucent.
Stir in the kimchi and gochugaru, and cook for 5 minutes until the kimchi is softened and aromatic.
Pour in the gluten-free soy sauce and mix well with the ingredients.
Add the gluten-free chicken or vegetable stock to the pot, and bring it to a boil.
