  • 250 milliliters Warm water
  • 250 grams Ground beef
  • 250 grams Ground pork
  • 1 large Onion, finely minced
  • 2 medium Garlic cloves, minced
  • 3 tablespoons Fresh cilantro, chopped
  • 1 teaspoon Black pepper
  • 1 teaspoon Ground coriander
  • 100 milliliters Water (for filling)

Directions

Step 1

In a large bowl, combine the gluten-free flour, xanthan gum, and 1 teaspoon of salt. Gradually add the warm water while mixing to form a dough. The dough should be pliable but not sticky.

Step 2

Knead the dough on a gluten-free floured surface for about 5 minutes until smooth. Cover it with a damp towel and let it rest for 30 minutes.

In a separate bowl, mix the ground beef, ground pork, minced onion, garlic, chopped cilantro, remaining salt, black pepper, and ground coriander. Gradually add 100 ml of water to the meat mixture, stirring until well combined and slightly sticky.

Divide the rested dough into two portions. Roll out each portion on a gluten-free floured surface to about 1/8 inch thickness. Use a 4-inch round cutter to cut out circles of dough.

Bring a large pot of salted water to a boil. Carefully drop the khinkali into the pot, ensuring not to overcrowd. Cook them in batches if necessary.
