Ingredients

  • 150 g Gluten-free all-purpose flour
  • 50 g Almond flour
  • 115 g Unsalted butter, softened
  • 100 g Granulated sugar
  • 1 whole Large egg
  • 1 tsp Vanilla extract
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 120 g Your favorite jam

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, almond flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the creamed butter and sugar, and continue mixing until well incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 6

Using a teaspoon, scoop out dough to form 1-inch balls and place them on the prepared baking sheet about 2 inches apart.

Step 7

Use your thumb or the back of a small spoon to make an indentation in the center of each cookie dough ball.

Step 8

Fill each indentation with about 1/2 teaspoon of your favorite jam.

Step 9

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
