Ingredients

  • 300 grams Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 2.25 teaspoons Instant yeast
  • 50 grams Granulated sugar
  • 0.5 teaspoon Salt
  • 200 milliliters Whole milk
  • 60 grams Unsalted butter
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 250 grams Fresh blueberries
  • 2 tablespoons Cornstarch
  • 1 unit Egg yolk
  • 2 tablespoons Powdered sugar

Directions

Step 1

In a large bowl, combine gluten-free flour and xanthan gum.

Step 2

Add instant yeast, granulated sugar, and salt to the flour mixture and stir to combine.

Step 3

In a small saucepan, heat the milk and butter over low heat until the butter is melted. Allow to cool until lukewarm.

Step 4

Whisk the egg and vanilla extract into the milk mixture.

Step 5

Gradually add the wet ingredients to the dry ingredients, stirring to form a sticky dough.

Knead the dough lightly on a floured surface until smooth. Form into a ball.
