Ingredients

  • 240 grams Gluten-free all-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 115 grams Unsalted butter, softened
  • 150 grams Brown sugar, packed
  • 50 grams Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 150 grams Gluten-free chocolate chips
  • 1 liter Vanilla ice cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, baking soda, and salt. Set aside.

Step 3

In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth.

Step 4

Add the egg and vanilla extract to the butter mixture, beating until well incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 6

Fold in the gluten-free chocolate chips.

Step 7

Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow them to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Step 9

Once the cookies have cooled completely, take a generous scoop of vanilla ice cream and sandwich it between two cookies, pressing gently.

Step 10

Wrap each ice cream sandwich in plastic wrap and place them in the freezer for at least 30 minutes to firm up before serving.
