Ingredients

  • 180 grams gluten-free oats
  • 360 milliliters warm water
  • 60 grams honey
  • 60 milliliters olive oil
  • 5 grams salt
  • 10 grams active dry yeast
  • 200 grams gluten-free oat flour
  • 180 grams gluten-free all-purpose flour
  • 5 grams xanthan gum
  • 7 grams baking powder

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Grease a 9x5 inch loaf pan with olive oil or line it with parchment paper.

Step 3

In a small bowl, combine the warm water and honey; stir until the honey is dissolved.

Step 4

Add the active dry yeast to the water and honey mixture and let it sit for about 5-10 minutes until it becomes frothy.

Step 5

In a large mixing bowl, combine the gluten-free oat flour, gluten-free all-purpose flour, gluten-free oats, xanthan gum, baking powder, and salt. Mix well.

Step 6

Create a well in the center of the dry ingredients and add the yeast mixture and olive oil.

Step 7

Stir the mixture with a wooden spoon or a spatula until well combined. The dough will be thick and sticky.

Step 8

Transfer the dough into the prepared loaf pan. Smooth the top with a spatula and cover lightly with plastic wrap or a clean kitchen towel.

Step 9

Let the dough rise in a warm place for about 20-30 minutes or until it has doubled in size.

Step 10

Once the dough has risen, bake in the preheated oven for about 45-50 minutes or until the bread is golden brown and sounds hollow when tapped.

Step 11

Remove from the oven and let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
