Ingredients

  • 2 pieces Chicken breast fillets
  • 240 ml Buttermilk
  • 2 tablespoons Hot sauce
  • 120 grams Gluten-free flour
  • 100 grams Gluten-free breadcrumbs
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 500 ml Oil for frying

Directions

Step 1

Place the chicken breast fillets in a shallow dish.

Step 2

In a bowl, mix together the buttermilk and hot sauce. Pour this mixture over the chicken, ensuring each piece is well coated. Cover and let it marinate in the refrigerator for at least 1 hour, up to overnight for best results.

Step 3

In a separate bowl, combine the gluten-free flour, gluten-free breadcrumbs, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Step 4

Remove the marinated chicken from the refrigerator. One at a time, remove each piece of chicken from the buttermilk mixture and let any excess drip off.

Step 5

Dredge the chicken in the prepared flour and breadcrumb mixture, pressing down gently to ensure an even coat.

Step 6

Heat oil in a deep, heavy skillet or frying pan over medium heat until it reaches 180°C (350°F).

Step 7

Carefully place the coated chicken fillets into the hot oil. Fry for about 5 minutes on each side, or until the chicken is golden brown and fully cooked through.

Step 8

Remove the fillets from the oil and drain on a paper towel-lined plate to remove any excess oil.

Step 9

Serve the gluten-free zinger fillets hot, with your favorite dipping sauces or in a gluten-free bun with fresh lettuce and mayonnaise.
