Ingredients

  • 350 grams Gluten-free all-purpose flour blend
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Salt
  • 2 tablespoons Sugar
  • 2.5 teaspoons Instant yeast
  • 250 milliliters Warm milk
  • 30 grams Unsalted butter, melted
  • 1 large Egg
  • 1 tablespoon Olive oil (for greasing)
  • 20 grams Butter (for brushing)

Directions

Step 1

In a large mixing bowl, combine the gluten-free all-purpose flour blend, xanthan gum, salt, sugar, and instant yeast.

Step 2

In a separate bowl, mix the warm milk, melted butter, and egg until well combined.

Step 3

Gradually add the wet ingredients to the dry ingredients, stirring continuously to form a sticky dough.

Step 4

Transfer the dough onto a clean, lightly floured surface and knead it gently for about 5 minutes until it becomes smooth. Though sticky, the dough should be pliable.

Step 5

Grease a large bowl with olive oil and place the dough inside, turning it to coat with oil.

Step 6

Cover the bowl with a damp cloth and allow the dough to rise in a warm place for about 1 hour or until it doubles in size.

Step 7

Once risen, punch down the dough gently and divide it into 12 equal parts.

Step 8

Roll each part into a smooth ball and arrange them in a greased baking dish, spaced slightly apart.

Step 9

Cover the rolls again with a damp cloth and let them rise for an additional 30 minutes.

Step 10

Preheat your oven to 180°C (350°F).

Step 11

Bake the pav in the preheated oven for about 20-25 minutes or until the tops are golden brown.

Step 12

Remove from the oven and brush the tops with melted butter to give them a soft and shiny crust.

Step 13

Allow the pav rolls to cool slightly before serving. They are best served warm, alongside your favorite Indian street foods like pav bhaji.
