Ingredients

  • 500 grams Gluten-free flour blend
  • 7 grams Instant yeast
  • 250 ml Warm water (about 110°F / 43°C)
  • 2 large Eggs
  • 60 ml Olive oil
  • 1 teaspoon Salt
  • 2 tablespoons Sugar
  • 300 grams Chicken breast, cooked and shredded
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Parsley, chopped
  • 30 grams Butter
  • 30 ml Milk (for brushing)

Directions

Step 1

In a mixing bowl, combine gluten-free flour, instant yeast, sugar, and salt.

Step 2

In another bowl, beat the eggs and add warm water and olive oil. Mix until well combined.

Step 3

Pour the wet ingredients into the dry ingredients and mix until a dough forms. The dough will be slightly stickier than traditional wheat doughs.

Step 4

Cover the dough with a clean cloth and let it rise in a warm place for about 30 minutes, or until it doubles in size.

For the filling: In a skillet, melt butter over medium heat. Add chopped onion and cook until translucent.

Add minced garlic to the onion and sauté for another minute.

Add the shredded chicken, salt, black pepper, and paprika to the skillet. Stir to combine and cook for 5 minutes. Remove from heat, and stir in chopped parsley. Allow to cool.
