Ingredients

  • 4 pieces Gluten-free tortillas
  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 cups Lettuce mix (Romaine and Iceberg)
  • 0.5 cup Red cabbage, thinly sliced
  • 0.5 cup Carrot, julienned
  • 1 cup Cheddar cheese, shredded
  • 0.5 cup Avocado ranch dressing

Directions

Step 1

Start by preheating your grill or a grill pan over medium-high heat.

Step 2

While the grill heats, place the chicken breasts on a cutting board and pat them dry with paper towels. Brush both sides of the chicken with olive oil, and season evenly with salt, black pepper, and garlic powder.

Step 3

Place the seasoned chicken breasts on the grill. Cook for about 6-8 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Step 4

Remove the chicken from the grill and let it rest for at least 5 minutes before slicing it into thin strips.

Step 5

While the chicken rests, prepare the filling. In a large bowl, combine the lettuce mix, red cabbage, and carrots. Toss lightly to mix.

Step 6

Lay out the gluten-free tortillas on a flat surface. Spread a tablespoon of avocado ranch dressing in the center of each tortilla.

Step 7

Divide the lettuce mixture evenly among the tortillas, placing it over the dressing. Top with the shredded cheddar cheese.

Step 8

Add the sliced chicken on top of the cheese, distributing it evenly.

Step 9

Carefully roll each tortilla, folding in the sides as you go to enclose the filling.

Step 10

Secure each wrap with a toothpick if necessary or slice in half diagonally and serve immediately.
