Ingredients

  • 360 grams Gluten-free all-purpose flour (preferably with xanthan gum)
  • 7 grams Instant yeast
  • 50 grams Granulated sugar
  • 5 grams Salt
  • 240 milliliters Whole milk
  • 60 grams Unsalted butter, melted
  • 2 Large eggs
  • 150 grams Brown sugar, packed
  • 10 grams Cinnamon
  • 120 milliliters Heavy cream
  • 60 grams Honey
  • 5 milliliters Vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a 9x13-inch baking dish.

Step 2

In a large mixing bowl, whisk 360g of gluten-free all-purpose flour, 50g of granulated sugar, 5g of salt, and 7g of instant yeast.

Step 3

Warm 240ml of milk until lukewarm (not hot) and combine with 60g of melted unsalted butter and two large eggs in another bowl.

Step 4

Slowly pour the wet ingredients into the dry ingredients, mixing until a smooth dough forms.

Transfer the dough onto a lightly floured surface and roll out into a rectangle approximately 12x15 inches.

Sprinkle 150g of packed brown sugar and 10g of cinnamon over the dough, then gently roll the dough, ending with the seam side down.
