In a large mixing bowl, combine gluten-free all-purpose flour, sugar, instant dry yeast, xanthan gum, and salt. Mix well.
In a small saucepan, melt the butter over low heat. Add in whole milk and warm until lukewarm. Remove from heat.
In a separate bowl, beat the 3 large eggs and add them to the butter and milk mixture. Mix thoroughly.
Make a well in the center of the dry ingredients and pour in the warm water, honey, and the egg-butter-milk mixture. Mix with a wooden spoon or stand mixer with paddle attachment until a soft dough forms.
The dough will be sticky. Cover the bowl with plastic wrap or a damp kitchen towel and let it rest for 1 hour in a warm environment until it slightly rises.
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.
After the dough has rested, grease your hands with a bit of oil and divide the dough into 8 equal pieces. Shape each piece into a ball and place them on the prepared baking sheet, leaving enough space between each.
Cover the shaped buns with a kitchen towel and let them proof for another 20 minutes.
For the egg wash, whisk together the egg yolk and 1 tablespoon of milk. Gently brush the tops of each bun with the egg wash.
Bake the buns in the preheated oven for 20-25 minutes, or until they are golden brown and sound hollow when tapped.
