Ingredients

  • 8 ounces gluten-free elbow macaroni
  • 4 tablespoons unsalted butter
  • 1 cup milk
  • 2 cups sharp cheddar cheese, grated
  • 1 cup parmesan cheese, grated
  • 2 tablespoons cream cheese
  • 1 tablespoon cornstarch
  • 1 teaspoon mustard powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free elbow macaroni and cook according to the package instructions until al dente, usually about 6-8 minutes. Drain and set aside.

Step 2

In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the cornstarch to create a roux, and cook for about 1 minute.

Step 3

Slowly add the milk to the roux, whisking constantly to prevent any lumps. Continue to cook and whisk until the mixture thickens, around 3-5 minutes.

Step 4

Lower the heat to medium-low and add the grated cheddar, parmesan, and cream cheese to the thickened milk mixture. Stir continuously until the cheeses are fully melted and the sauce is smooth.

Step 5

Add the mustard powder, garlic powder, onion powder, paprika, salt, and black pepper to the cheese sauce. Stir to combine.

Step 6

Add the drained pasta to the cheese sauce, and stir until the pasta is well-coated with the sauce.

Step 7

Serve immediately, garnished with a sprinkle of paprika if desired.
