  • 4 rounds Hermelin cheese (or Camembert)

  • 0.5 cup Apple cider vinegar
  • 2 tablespoons Czech or other pickling spice mix
  • 4 cloves Garlic cloves, thinly sliced
  • 1 medium Small onion, thinly sliced
  • 2 leaves Bay leaves
  • 4 sprigs Fresh thyme sprigs
  • 1 teaspoon Crushed white peppercorns

Directions

Step 1

Prepare the marinade: In a large mixing bowl, combine the gluten-free soy sauce, olive oil, apple cider vinegar, pickling spice mix, and crushed white peppercorns. Mix well to ensure all ingredients are fully blended.

Step 2

Cut each round of Hermelin or Camembert cheese in half horizontally to create two thinner rounds from each. Set them aside.

Step 3

In a sterilized glass jar or airtight container, layer some of the sliced onions, a few garlic slices, a couple of thyme sprigs, and a bay leaf on the bottom.

Place a layer of the cut cheese rounds on top of the aromatics.

Step 5

Repeat layering with the remaining onion, garlic, thyme, bay leaves, and cheese until all ingredients are used, finishing with a layer of aromatics on top.
