  • 12 ounces Mixed mushrooms (cremini, shiitake, and button), sliced
  • 0.5 cup Dry white wine
  • 8 cups Gluten-free vegetable broth
  • 0.75 cup Gluten-free barley or brown rice
  • 1 teaspoon Dried thyme
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 0.25 cup Fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are soft and the onion is translucent.
