Ingredients

  • 500 grams chicken livers
  • 3 tablespoons olive oil
  • 1 large onion
  • 2 medium carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 3 medium potatoes
  • 4 cups gluten-free beef broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas

Directions

Step 1

Rinse the chicken livers thoroughly under cold water. Pat them dry with paper towels and cut them into bite-sized pieces.

Step 2

Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the liver pieces and sear them until browned on all sides, about 5-7 minutes. Transfer the liver to a plate and set aside.

Dice the large onion, slice the carrots and celery stalks, and mince the garlic cloves.

Add the remaining tablespoon of olive oil to the same pot and sauté the onion, carrots, and celery until the onion becomes translucent, about 5 minutes.
