Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 stalks celery, chopped
  • 2 medium potatoes, diced
  • 1 pound green beans, trimmed and cut into 1-inch pieces
  • 6 cups chicken or vegetable broth
  • 1 whole bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 15-ounce can canned diced tomatoes
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté until it becomes translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the sliced carrots, chopped celery, and diced potatoes to the pot, stirring to combine with the onion and garlic.

Step 5

Pour in the broth and add the green beans, bay leaf, dried thyme, dried oregano, salt, and black pepper.

Step 6

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.

Step 7

Stir in the canned diced tomatoes with their juice.

Step 8

In a small bowl, mix the cornstarch and cold water to create a slurry.

Step 9

Add the cornstarch slurry to the soup and stir well, allowing the broth to thicken slightly as it simmers for an additional 5 minutes.

Step 10

Remove the bay leaf and adjust seasoning if necessary.

Step 11

Serve the soup hot and garnish with freshly chopped parsley.
