  • 2 medium Celery stalks, sliced
  • 8 ounces Gluten-free fideo noodles (or gluten-free spaghetti broken into 1-inch pieces)
  • 14.5 ounces Canned diced tomatoes
  • 6 cups Vegetable or chicken broth (ensure gluten-free)
  • 1 whole Bay leaf
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Fresh spinach leaves
  • 0.25 cup Fresh cilantro leaves, chopped
  • 1 whole Lime, cut into wedges

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion and minced garlic; sauté until the onion is soft and translucent, approximately 4-5 minutes.

Add the sliced carrots and celery, and cook for another 3-4 minutes until they start to soften.

Step 4

Stir in the gluten-free fideo noodles and toast them lightly in the oil and vegetables, stirring continuously for about 2-3 minutes until they start to lightly brown.

Pour in the canned diced tomatoes and stir to combine.
