  • 1 pound lean ground beef

  • 3 cloves garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 29 ounces canned diced tomatoes
  • 3 tablespoons tomato paste
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned corn, drained
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups beef broth or stock

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

Step 2

Add the lean ground beef to the pot. Cook until browned, breaking it up with a spoon, about 5-7 minutes.

Step 3

Once the beef is browned, add the diced red and green bell peppers. Cook for another 3-4 minutes until the peppers start to soften.
