Ingredients

  • 1.5 pounds Beef chuck, cut into bite-sized pieces

  • 1 large Onion, chopped
  • 3 Garlic cloves, minced
  • 3 Carrots, sliced
  • 3 Celery stalks, sliced
  • 2 tablespoons Tomato paste
  • 8 cups Gluten-free beef broth
  • 2 Bay leaves
  • 1 teaspoon Thyme leaves, dried
  • 8 ounces Gluten-free noodles
  • 0.25 cup Fresh parsley, chopped

Directions

Step 1

Season the beef pieces with salt and pepper. Heat olive oil in a large pot over medium-high heat.

Step 2

Add the beef to the pot in batches and sear until browned on all sides, about 5 minutes per batch. Remove beef and set aside.

Step 3

In the same pot, add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
