Ingredients

  • 2 pounds Beef chuck roast
  • 0.5 cup Gluten-free soy sauce
  • 1 cup Pineapple juice
  • 0.25 cup Brown sugar
  • 2 tablespoons Rice vinegar
  • 2 cloves Minced garlic
  • 1 tablespoon Fresh ginger, grated
  • 0.5 teaspoon Crushed red pepper flakes
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 cup Pineapple slices
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water
  • 2 for garnish Scallions, chopped

Directions

Step 1

Trim any excess fat from the beef chuck roast and cut it into 2-inch chunks.

Step 2

In a large bowl, combine gluten-free soy sauce, pineapple juice, brown sugar, rice vinegar, minced garlic, grated ginger, crushed red pepper flakes, salt, and black pepper.

Step 3

Add the beef chunks into the mixture, ensuring all pieces are well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for more flavor.

Step 4

Preheat your slow cooker. Transfer the marinated meat and all the marinade into the slow cooker.

Step 5

Cover and cook on the low setting for about 4 to 5 hours, or until the beef is tender and full of flavor.

Step 6

Add the pineapple slices into the slow cooker about 30 minutes before the cooking is completed.

Step 7

Once the beef is ready, mix the cornstarch with cold water to create a slurry.

Step 8

Set the slow cooker to high, and stir in the cornstarch slurry. Cook until the sauce thickens, approximately 5 to 10 more minutes.

Step 9

Turn off the slow cooker. Garnish with chopped scallions before serving.

Step 10

Serve the Hawaiian Barbecue Beef hot with your choice of rice or gluten-free noodles.
