  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons Unsalted butter
  • 1 cup Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 2 Garlic cloves
  • 1 pound Ground beef
  • 1 medium Carrot
  • 1 cup Gluten-free beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 cup Grated Gruyère cheese

Directions

Step 1

Peel and chop the potatoes into large chunks. Boil them in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.

Add 2 tablespoons of butter and the milk to the potatoes. Mash until smooth. Season with salt and black pepper. Set aside.
