Ingredients

  • 250 grams Shrimp
  • 50 grams Pork fat
  • 120 grams Tapioca starch
  • 60 grams Rice flour
  • 0.5 teaspoon Salt
  • 1 teaspoon Sugar
  • 0.25 teaspoon White pepper
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Xanthan gum
  • 180 ml Cold water
  • 150 ml Hot water

Directions

Step 1

Start by preparing the filling. Clean and devein the shrimp. Chop them into small pieces and set aside.

Step 2

Finely chop the pork fat and mix it with the shrimp in a bowl.

Step 3

Add salt, sugar, white pepper, and sesame oil to the mixture. Stir well to combine and refrigerate until needed.

Step 4

To make the gluten-free dumpling wrappers, mix the tapioca starch, rice flour, and xanthan gum in a mixing bowl.

Step 5

Slowly add hot water to the flour mixture, stirring continuously to form a sticky dough.

Step 6

Add the cold water gradually and continue to mix until the dough is smoother and pliable.

Step 7

Transfer the dough to a clean work surface and knead it for about 3-4 minutes. Cover it with a damp cloth to prevent drying.

Step 8

Divide the dough into small balls about the size of a grape. Flatten each ball gently using a rolling pin into a thin oval or circular shape about 7 cm in diameter.

Step 9

Place a teaspoon of shrimp filling in the center of each wrapper.

Step 10

Fold the dumpling in half and use your fingers to pleat and press the edges together, making sure they are well sealed.

Step 11

Prepare a steamer with parchment paper to prevent sticking.

Step 12

Place the dumplings in the steamer, ensuring they do not touch each other.

Step 13

Steam the dumplings over boiling water for about 6-8 minutes, or until the wrappers become translucent and the filling is cooked through.

Step 14

Serve the ha gau immediately with your choice of soy sauce or chili oil on the side.
