Ingredients

  • 3 tablespoons Ghee
  • 1 cup Besan (Chickpea flour)
  • 1 cup Almond Flour
  • 1.5 cups Full Cream Milk
  • 0.75 cup Cane Sugar
  • 0.5 teaspoon Cardamom Powder
  • 0.25 cup Chopped Cashews
  • 0.25 cup Chopped Almonds
  • 0.25 teaspoon Saffron Strands

Directions

Step 1

Prepare a baking dish or a tray by greasing it lightly with ghee and set it aside.

Step 2

In a heavy-bottomed pan, heat the ghee over medium heat.

Step 3

Add the besan (chickpea flour) to the pan and roast it in the ghee, stirring continuously until it turns golden brown and gives off a nutty aroma, about 10-12 minutes.

Step 4

Gradually add the almond flour to the pan, continue roasting for another 5-7 minutes, ensuring it doesn't burn.

Step 5

Slowly pour in the full cream milk, stirring continuously to prevent any lumps from forming. Lower the heat if necessary.

Step 6

Once the milk is well incorporated, add the cane sugar. Mix well and cook until the sugar dissolves completely.

Step 7

Add the cardamom powder, chopped cashews, chopped almonds, and saffron strands into the mixture, stirring to combine evenly.

Step 8

Continue to cook the mixture on low heat until it thickens and starts to leave the sides of the pan, approximately 10-15 minutes.

Step 9

Transfer the mixture onto the greased tray, spreading it out evenly and smoothing the top with a spatula.

Step 10

Allow it to cool at room temperature and then refrigerate for at least 1 hour to set properly.

Step 11

Once set, cut the gudpak into squares or diamond shapes before serving.
