Ingredients

  • 2 Gluten-free baguette
  • 2 pieces Boneless skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Lettuce leaves
  • 1 large Tomato
  • 0.5 whole Red onion
  • 4 tablespoons Mayonnaise
  • 2 tablespoons Mustard

Directions

Step 1

In a small bowl, mix together olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.

Step 2

Place the chicken breasts in a bowl or plastic bag and pour the marinade over them. Let them marinate for at least 15 minutes.

Step 3

While the chicken is marinating, preheat the grill to medium-high heat.

Once the grill is ready, place the marinated chicken breasts on the grill. Grill each side for about 5-7 minutes or until fully cooked and juices run clear.

Remove the chicken from the grill and let it rest for a few minutes. Then slice the chicken breasts into thin strips.

Step 7

Slice the tomato and red onion into thin rings.

Step 8

Spread a layer of mayonnaise on one side of each baguette and a layer of mustard on the other side.

Step 9

Layer the lettuce leaves, tomato slices, onion rings, and grilled chicken strips inside each baguette.

Step 10

Close the sandwiches and serve immediately.
