  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 cup cucumber, sliced
  • 4 large pieces lettuce leaves
  • 1 large carrot, shredded
  • 1 medium red bell pepper, sliced

Directions

Step 1

In a small bowl, mix the olive oil, gluten-free soy sauce, garlic powder, paprika, salt, and black pepper to create a marinade.

Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag, ensuring the chicken is well coated. Marinate for at least 30 minutes in the refrigerator, or up to overnight for more flavor.
