Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 large Red onion
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 3 Garlic cloves, minced
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Cumin

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and place them in a large mixing bowl.

Step 2

Cut the red and green bell peppers into similar 1-inch pieces. Peel and cut the red onion into wedges, and separate the layers. Add the vegetables to the bowl with the chicken.

Step 3

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, paprika, salt, black pepper, and cumin to create the marinade.

Step 4

Pour the marinade over the chicken and vegetables. Toss everything gently to ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 2 hours for best results.

Step 5

Preheat your grill to medium-high heat.

Step 6

Thread the marinated chicken and vegetables onto skewers, alternating between the chicken cubes, bell pepper pieces, and onion layers.

Step 7

Lightly oil the grill grates to prevent sticking. Place the brochettes on the grill.

Step 8

Grill the brochettes for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks. The chicken should reach an internal temperature of 165°F (74°C).

Step 9

Once cooked, remove the brochettes from the grill. Serve them hot with your choice of gluten-free side dish or salad.
