In a large bowl, mix the gluten-free all-purpose flour, xanthan gum, instant yeast, sugar, and salt together until well combined.
In a separate bowl, whisk together the warm water, olive oil, egg, and plain yogurt until smooth and integrated.
Pour the wet ingredients into the dry ingredients. Stir well until a smooth, thick batter forms.
Cover the bowl with a damp cloth and let it sit in a warm place for about 30 minutes to allow the batter to rise slightly.
