Ingredients

  • 250 grams Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 7 grams Instant yeast
  • 50 grams Granulated sugar
  • 1 teaspoon Salt
  • 150 milliliters Warm milk (or non-dairy alternative)
  • 50 grams Unsalted butter, melted (or dairy-free alternative)
  • 1 Large egg, beaten
  • 50 grams Butter, softened (filling)
  • 50 grams Brown sugar
  • 1 tablespoon Ground cinnamon
  • 1 whole egg Egg wash (1 large egg beaten with a tablespoon of water)

Directions

Step 1

In a large bowl, combine the gluten-free all-purpose flour and xanthan gum. Stir in the instant yeast, granulated sugar, and salt.

Step 2

Warm the milk in a small saucepan until it's warm to the touch (not hot). Stir the warm milk into the dry ingredients.

Step 3

Add the melted butter and beaten egg to the mixture. Stir until the dough comes together. The dough should be soft but not sticky.

Step 4

Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic.

Step 5

Cover the dough with a clean kitchen towel and let it rise in a warm place for about 45 minutes to 1 hour, or until doubled in size.

Step 6

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 7

Roll out the risen dough on a lightly floured surface into a large rectangle about 12x10 inches.

Step 8

Spread the softened butter evenly over the surface of the dough. Mix the brown sugar and ground cinnamon in a small bowl and sprinkle the mixture evenly over the buttered dough.

Step 9

Starting from a long side, tightly roll up the dough into a log. Cut the log into 12 equal pieces.

Step 10

Place the rolled pieces, cut side up, on the prepared baking sheet, leaving space between each bun.

Step 11

Brush the tops of the buns with the egg wash to help them brown and give a shiny finish.

Step 12

Bake in the preheated oven for 12-15 minutes, or until golden brown.

Step 13

Let the buns cool slightly on a wire rack before serving. Enjoy your gluten-free gifflar fresh and warm!
