  • 1 large, diced Onion
  • 2 medium, diced Carrots
  • 2 diced Celery stalks
  • 3 minced Garlic cloves
  • 5 ounces, diced Smoked bacon
  • 1 cup Buckwheat groats
  • 2 medium, peeled and diced Potatoes
  • 6 cups Vegetable broth
  • 2 Bay leaves
  • 1 teaspoon, dried Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons, chopped Parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the onion is translucent.

Step 3

Stir in the minced garlic and diced smoked bacon, cooking for another 3 minutes until the bacon starts to brown.

Add the buckwheat groats and diced potatoes to the pot.

Pour in the vegetable broth and stir to combine all the ingredients.
