Ingredients

  • 12 ounces gluten-free spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons extra-virgin olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 0.5 teaspoons red pepper flakes
  • 0.25 cups fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste ground black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free spaghetti and cook according to the package instructions until al dente. Drain the pasta, reserving about 1 cup of the pasta water, and set aside.

Step 2

In a large skillet over medium-high heat, melt the butter with the olive oil until it begins to sizzle. Add the minced garlic and sauté for 1 minute until fragrant but not browned.

Step 3

Add the shrimp to the skillet in a single layer. Sprinkle with salt and black pepper to taste. Cook for 2-3 minutes on one side until the shrimp start to turn pink.

Step 4

Flip the shrimp and pour the lemon juice over them. Add the red pepper flakes and cook for another 2-3 minutes until the shrimp are opaque and cooked through. Remove the shrimp from the skillet and set them aside.

Step 5

In the same skillet, add the cooked pasta and toss with the garlic butter sauce, adding reserved pasta water as needed to loosen the pasta to the desired consistency.

Step 6

Return the shrimp to the skillet and toss everything together to combine.

Step 7

Garnish with chopped fresh parsley. Adjust seasoning with additional salt and pepper if necessary.

Step 8

Serve the pasta hot, and enjoy your gluten-free garlic butter shrimp pasta!
