Ingredients

  • 3 tablespoons Gluten-free soy sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoons Olive oil
  • 3 units Garlic cloves, minced
  • 4 units Green onions, sliced
  • 1 unit Red bell pepper, diced
  • 2 units Carrots, diced
  • 1 cup Frozen peas
  • 12 ounces Gluten-free sausage, sliced
  • 4 cups Cooked jasmine rice, cooled
  • 2 units Eggs, beaten
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a small bowl, mix the gluten-free soy sauce and sesame oil together. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Step 3

Add minced garlic and the white parts of the green onions. Stir-fry for about 1 minute until fragrant.

Step 4

Add diced red bell pepper and carrots to the skillet. Stir-fry for 3-4 minutes until they begin to soften.

Step 5

Add frozen peas and sausage slices to the skillet. Stir-fry for another 3 minutes or until the sausage is thoroughly warmed.

Step 6

Push the sausage and vegetables to one side of the pan and add an additional 1 tablespoon of olive oil to the empty side.

Step 7

Pour the beaten eggs into the empty side of the skillet. Stir to scramble gently, and combine with sausage and vegetables once set.

Step 8

Add the cooked and cooled jasmine rice to the skillet. Increase heat to high and stir to combine all the ingredients well.

Step 9

Pour the soy sauce mixture over the rice and continue to stir and fry for 3-4 minutes, or until the rice is well-coated and heated through.

Step 10

Season the fried rice with salt and black pepper, stirring well.

Step 11

Garnish with the remaining green parts of the green onions just before serving.
