  • 2 cups Vegetable oil for frying
  • 0.5 cup Cornstarch

Directions

Step 1

Peel and dice the potatoes into uniform cubes. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are fork-tender, about 15 minutes.

Drain the potatoes and return them to the pot. Mash the potatoes thoroughly until smooth. Let them cool slightly.
