Slice the green tomatoes into 1/4-inch thick slices and set aside.
In a shallow dish, mix together the gluten-free all-purpose flour, cornmeal, cornstarch, salt, black pepper, paprika, and cayenne pepper.
In a separate bowl, whisk together the buttermilk and egg until fully combined.
