Ingredients

  • 8 pieces Chicken thighs
  • 2 cups Gluten-free all-purpose flour
  • 0.5 cup Cornstarch
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 tablespoon Paprika
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 cups Buttermilk
  • 2 large Eggs
  • 4 cups Vegetable oil
  • 0.25 cup Butter
  • 2 cups Chicken broth
  • 1 cup Milk

Directions

Step 1

In a large bowl, combine the gluten-free flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. Mix well and set aside.

Step 2

In another bowl, whisk together the buttermilk and eggs until smooth.

Step 3

Dip each chicken thigh into the buttermilk mixture, allowing excess to drip off, then dredge in the flour mixture until fully coated.

Step 4

Place the coated chicken on a wire rack and let sit for 15 minutes to set the coating.

Step 5

In a large skillet, heat the vegetable oil over medium heat to 350°F (175°C).

Step 6

Carefully add the chicken thighs to the hot oil, frying in batches if necessary, and cook for 12-15 minutes per side or until the coating is golden brown and crispy, and the internal temperature reaches 165°F (74°C).

Step 7

Remove the chicken from the oil and let it drain on paper towels.

Step 8

To make the gravy, melt the butter in a saucepan over medium heat.

Step 9

Stir in 1/4 cup of the reserved gluten-free flour mixture until it forms a paste.

Step 10

Gradually whisk in the chicken broth and milk, stirring constantly to prevent lumps.

Step 11

Cook until the gravy thickens, about 5-7 minutes. Season with additional salt and pepper to taste.

Step 12

Serve the fried chicken hot with the gravy on the side or poured over.
