Ingredients

  • 300 grams Gluten-free all-purpose flour
  • 7 grams Instant yeast
  • 10 grams Sugar
  • 5 grams Salt
  • 5 grams Xanthan gum
  • 240 milliliters Warm water
  • 60 milliliters Olive oil
  • 10 milliliters White vinegar
  • 1 large Egg
  • 15 grams Sesame seeds
  • 5 grams Nigella seeds

Directions

Step 1

In a large bowl, combine gluten-free all-purpose flour, instant yeast, sugar, salt, and xanthan gum. Mix well to ensure the dry ingredients are evenly distributed.

Step 2

In a separate bowl, whisk together the warm water, olive oil, and white vinegar. Pour the wet ingredients into the dry mixture.

Step 3

Add the egg to the bowl and mix until a smooth, sticky dough forms. You can use a stand mixer with a paddle attachment on low speed to help with mixing.

Step 4

Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 60 minutes or until it has doubled in size.

Step 5

Preheat the oven to 220°C (430°F) and line a baking tray with parchment paper.

Step 6

Gently punch down the dough to release a bit of the gas, then transfer it to the prepared baking tray. Using wet hands, gently shape the dough into an oval about 1.5 cm thick.

Step 7

Using the back of a spoon or your fingertips, make indentations in the dough. This is a signature look for traditional Fladenbrot.

Step 8

Sprinkle sesame and nigella seeds evenly over the top of the dough, gently pressing them into the surface.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the flatbread is golden brown and cooked through.

Step 10

Remove from the oven and allow to cool slightly. Slice and serve warm, or cool completely and use as desired.
