  • 2 slices Cheddar cheese
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 1 tablespoon Milk
  • 1 teaspoon Olive oil

Directions

Step 1

Split the gluten-free English muffins and toast them until golden brown. Set aside.

Step 2

In a small bowl, crack the eggs and add the milk, salt, and black pepper. Whisk together until well combined.

Heat a non-stick skillet over medium heat and add olive oil to coat the pan.

Pour the egg mixture into the skillet and allow it to cook until the edges begin to set, about 2 minutes.

Step 5

Gently stir the eggs with a spatula, folding them over until fully cooked but still slightly soft, approximately 2-3 minutes. Remove from heat.

Step 6

Spread butter on the toasted sides of the English muffins.

Step 7

Place a slice of cheddar cheese on the bottom half of each muffin.

Step 8

Divide the scrambled eggs evenly between the two sandwiches, placing them on top of the cheese.

Top each sandwich with the remaining muffin half.

Step 10

Press gently to secure and allow the cheese to melt slightly before serving.
