Ingredients

  • 2 pieces gluten-free tortillas
  • 4 pieces large eggs
  • 2 tablespoons milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon butter
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup salsa (optional)
  • 1 piece avocado (sliced, optional)

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 2

Heat a non-stick skillet over medium heat and add the butter. Allow it to melt and coat the bottom of the skillet.

Step 3

Pour the egg mixture into the skillet. Stir gently with a spatula, pushing from the edges to the center, until the eggs are scrambled and fully cooked, about 4-5 minutes. Remove from heat.

Warm the gluten-free tortillas according to the package instructions, either in a microwave or on a skillet.
