Ingredients

  • 300 grams gluten-free all-purpose flour
  • 200 grams unsalted butter
  • 150 grams granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tablespoons Cold water
  • 900 grams apples (e.g. Granny Smith or Golden Delicious)
  • 2 tablespoons lemon juice
  • 2 teaspoons cinnamon powder
  • 30 grams cornstarch
  • 100 grams brown sugar
  • 50 grams raisins
  • 50 grams almond flour

Directions

Step 1

Preheat your oven to 180°C (356°F).

Step 2

In a mixing bowl, combine the gluten-free flour and 150 grams of granulated sugar.

Step 3

Add the butter, egg, and egg yolk. Mix until crumbly. Add 2 tablespoons of cold water to form a dough. Wrap and chill the dough for 20 minutes.

Step 4

Peel, core, and slice the apples. Toss them with lemon juice, cinnamon, cornstarch, brown sugar, and raisins in a large bowl.

Step 5

Roll out about 2/3 of the dough and line a 9-inch springform pan, pressing firmly to create a 1-inch high edge.

Step 6

Sprinkle almond flour over the dough base to absorb excess moisture from the apples.

Step 7

Fill the crust with the apple mixture, ensuring it is evenly distributed.

Step 8

Roll out the remaining dough and cut into strips. Place the strips in a lattice pattern over the apples.

Step 9

Bake in the preheated oven for 60 minutes until golden brown and the filling is bubbling.

Step 10

Allow the pie to cool before removing from the springform pan. Serve warm or at room temperature.
