  • 240 grams Gluten-free all-purpose flour

  • 0.5 teaspoon Salt
  • 113 grams Unsalted butter
  • 60 ml Cold water
  • 1 teaspoon Vanilla extract
  • 500 ml Milk
  • 40 grams Cornstarch
  • 4 large Egg yolks
  • 100 grams Sugar
  • 30 grams Butter

Directions

Step 1

In a large bowl, whisk together the gluten-free all-purpose flour, xanthan gum, sugar, and salt.

Cut the unsalted butter into small cubes and add to the flour mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.

Step 3

Gradually add cold water to the mixture and vanilla extract, mixing until the dough comes together. Form into a ball, cover with plastic wrap, and refrigerate for at least 30 minutes.

In a medium saucepan, heat the milk until it is just about to boil. Remove from heat and set aside.
