Ingredients

  • 1 cup Chickpea flour (besan)
  • 0.5 cup Rice flour
  • 0.25 teaspoon Baking soda
  • 0.5 teaspoon Ground turmeric
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Ground coriander
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.75 cup Water
  • 1 cup Finely chopped spinach
  • 1 Thinly sliced onion
  • 1 Grated carrot
  • 1 Green chili, finely chopped
  • 2 tablespoons Chopped fresh cilantro
  • 1 Large potato, peeled and thinly sliced
  • 3 cups Oil for frying

Directions

Step 1

In a large mixing bowl, sift together chickpea flour, rice flour, baking soda, turmeric, cumin, coriander, chili powder, and salt.

Step 2

Gradually add water to the dry ingredients, whisking until you get a smooth and thick batter. The consistency should be such that it coats the back of a spoon.

Step 3

Fold in the chopped spinach, onion, grated carrot, green chili, cilantro, and sliced potato until all the vegetables are well coated with the batter.

Step 4

Heat the oil in a deep pan or wok over medium-high heat. Make sure the oil is hot enough by dropping a small amount of batter into the oil; it should sizzle and rise to the surface immediately.

Step 5

Carefully drop spoonfuls of the vegetable batter into the hot oil, taking care not to overcrowd the pan.

Step 6

Fry the pakoras in batches until they are golden brown and crispy on all sides, approximately 4-5 minutes per batch.

Step 7

Using a slotted spoon, remove the pakoras and drain them on a paper towel-lined plate to remove excess oil.
