Ingredients

  • 1 medium Zucchini
  • 1 large Carrot
  • 1 medium Red bell pepper
  • 3 stalks Green onions
  • 1 cup Chickpea flour (besan)
  • 2 large Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Cumin powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon Baking powder
  • 0.25 cup Olive oil
  • 0.25 cup Fresh cilantro

Directions

Step 1

Grate the zucchini and carrot using a box grater and place them into a large mixing bowl.

Chop the red bell pepper and green onions finely and add them to the bowl.

Step 3

Into the bowl, add chickpea flour, beaten eggs, salt, ground black pepper, garlic powder, cumin powder, paprika, and baking powder.

Mix all the ingredients together until fully combined and the mixture is thick and holds together when pressed.
