Ingredients

  • 4 cups gluten-free puffed rice cereal
  • 0.5 cup unsweetened shredded coconut
  • 0.5 cup honey or maple syrup
  • 0.5 cup natural almond butter
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 0.25 cup mini chocolate chips (optional)
  • 1 tablespoon coconut oil (for greasing)

Directions

Step 1

Line an 8x8-inch square baking pan with parchment paper and lightly grease with coconut oil. Set aside.

Step 2

In a large mixing bowl, combine the gluten-free puffed rice cereal and unsweetened shredded coconut. Mix until evenly distributed.

Step 3

In a small saucepan over low heat, combine honey or maple syrup and natural almond butter. Stir continuously until the mixture is well combined and starts to thicken slightly, about 2-3 minutes.

Remove the saucepan from heat and stir in the vanilla extract and sea salt.
