Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 2 large Eggs
  • 1 cup Shredded cheese (cheddar or your choice)
  • 4 tablespoons Green onions, chopped
  • 1 cup Gluten-free breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, bring the water to a boil and add the quinoa. Reduce the heat to low, cover, and simmer for about 15 minutes or until the water is fully absorbed. Remove from heat and let it cool slightly.

Step 3

In a large bowl, beat the eggs. Stir in the slightly cooled quinoa, shredded cheese, chopped green onions, gluten-free breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Using your hands or a small cookie scoop, form small balls (about 1 inch in diameter) and place them onto the prepared baking sheet. Ensure they are spaced slightly apart.
