Ingredients

  • 4 medium Potatoes
  • 0.5 cup Gluten-free all-purpose flour
  • 2 large Eggs
  • 2 tablespoons Chives
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Gluten-free breadcrumbs
  • 2 cups Vegetable oil

Directions

Step 1

Peel and cube the potatoes. Boil them in a pot of salted water for about 15 minutes or until tender. Drain and let cool.

Step 2

In a large mixing bowl, mash the cooled potatoes using a masher or fork until smooth.

Step 3

Add to the mashed potatoes: gluten-free flour, eggs, chopped chives, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

Shape the mixture into small balls, about the size of a golf ball.

Place the gluten-free breadcrumbs in a shallow dish. Roll each potato ball in the breadcrumbs until fully coated.
