Ingredients

  • 1 pound Boneless, skinless chicken breast
  • 1 cup Buttermilk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 cup Gluten-free breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 2 Eggs
  • 0.5 cup Gluten-free flour (such as rice or almond flour)
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the chicken breast into bite-sized pieces, approximately 1 inch wide.

Step 3

In a medium bowl, combine the buttermilk, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Add the chicken pieces to the bowl and let them marinate for at least 15 minutes.
