Ingredients

  • 1 cup Rice flour
  • 0.5 cup Tapioca flour
  • 0.5 cup Yogurt
  • 0.75 cup Water
  • 1 cup Sugar
  • 10 strands Saffron strands
  • 0.25 teaspoon Cardamom powder
  • 0.5 teaspoon Baking powder
  • 0.5 teaspoon Lemon juice
  • 2 cups Ghee or oil (for frying)
  • 0.25 teaspoon Turmeric

Directions

Step 1

In a mixing bowl, combine rice flour, tapioca flour, yogurt, water, and turmeric. Mix well to form a smooth, thick batter. Cover and let it ferment for 12-24 hours in a warm place.

Step 2

Once the batter is fermented, add baking powder and mix gently to incorporate evenly.

Step 3

In a saucepan, dissolve the sugar in half a cup of water over medium heat to make a sugar syrup. Once it starts boiling, add saffron strands and cardamom powder.

Step 4

Let the syrup boil until it reaches one-string consistency. Turn off the heat and add lemon juice to prevent crystallization. Keep the syrup warm.

Step 5

Heat ghee or oil in a flat-bottomed pan on medium heat for frying.

Step 6

Transfer the batter into a squeeze bottle or a piping bag with a small nozzle.

Step 7

Squeeze the batter into the hot oil in a spiral motion to form jalebis. Fry the jalebis until they turn golden and crispy on both sides.

Step 8

Remove jalebis from oil, draining excess oil on paper towels briefly, then immediately submerge them into the warm sugar syrup.

Step 9

Let the jalebis soak in the syrup for 1-2 minutes to absorb the sweetness, then remove and serve warm.
