In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spoon, about 6-8 minutes.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent and soft, approximately 5 minutes.
Stir in the cumin, paprika, salt, and black pepper to season the beef mixture. Cook for an additional 2 minutes to allow the flavors to meld.
Remove the skillet from heat and set the beef mixture aside.
In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the right temperature.
Meanwhile, warm the gluten-free corn tortillas to make them more pliable. You can do this by placing them in a clean, dry skillet over medium heat for about 1 minute per side.

While still hot, open each taco slightly, and add a bit of shredded cheddar cheese, allowing it to melt slightly.
Top tacos with chopped lettuce, diced tomato, a dollop of sour cream, and some salsa.
